Being the sole chef in my household as well as a busy momma I am constantly looking for healthy recipes for my family that not only taste good but that I can pop together before hubby gets home and while baby is playing on his activity mat. Enter WALMART Live Better Magazine (this is amazing by the way....free at your local Wally World as well you can download the app which I have yet to do *tsk tsk Kristina*.
The Spring 2013 edition is chalk full with simple family friendly recipes that all look beautiful in the pictures and require very little shopping as they use staple foods that most people have on hand. Last night I decided to try their "Spring Oven Dinner, which promises a fuss-free dinner that roasts in half an hour. Tiny tomatoes and baby potatoes bake alongside the chicken." Ummmm....I have some thoughts about this Walmart foodies.
1) This is easy maybe a little too easy.
2) This does not roast in half an hour. The potatoes which I bought from Walmart in preparation for this were undercooked when the chicken was done, meaning we had to pull the chicken out of the pan and put them back in to finish cooking.
3) The seasoning on this is quite bland for out taste buds.
4) The tomatoes lost a lot of flavor being roasted for as long as they did. (Hubby didn't even eat his)
The end result was a frustrating mixture of chicken, overcooked tomatoes, and undercooked potatoes which the trash gobbled up at the end of the night. I wanted to love this because I love the rest of the magazine and the other recipes. But I have to be honest all in all I do not recommend trying this recipe and if you do comment below if you have better luck with it.
